A NOURISHING PUMPKIN SOUP RECIPE
Embrace the cozy essence of autumn with this delicious pumpkin soup. This golden bowl of warmth is a comforting, healthy choice, perfect for any fall day. Each spoonful nourishes your body and soul, drawing you deeper into the season’s magic. As you savor this seasonal bowl, enjoy the benefits of eating with the rhythms of nature—pumpkin’s rich nutrients bring nourishment and warmth to sustain you through the colder months.
PREP TIME: 10 mins
COOK TIME: 35 mins
SERVINGS: 6 people
INGREDIENTS:
3 cups water, 2 cups broth (vegetable or chicken or bone broth for a collagen boost), 1/2 cup coconut milk, 1/2 cup milk (non-dairy if you prefer), 2 oz pumpkin puree, 2 stocks of carrots (throw in extra veggies to your liking), 1/2 tsp ground ginger, 1 clove garlic, 1/2 white onion, 1 tsp sea salt, 1 tsp butter (vegan or other). Feel free to make this soup with your own preferences.
Add optional toppings like cinnamon, nutmeg, toasted pumpkin seeds, fresh herbs (I like using a sprig of thyme) for a gourmet touch.
INSTRUCTIONS:
Place the water and broth in a pot, and bring the water to a boil. Add the carrots, onions cut in quarters, and whole garlic to cook.
Once the carrots, onions and garlic are cooked, remove from pot and puree in a blender.
Add into the pot the coconut milk, dairy milk, the puree.
Add into the pot the ginger, cinnamon, nutmeg, salt, butter to your liking.
Turn off the burner, sprinkle thyme leaves, stir.
Let the ingredients steep in the pot for 3 minutes.
